O que se sabe sobre os benefícios do alho à saúde

Por milhares de anos, usamos um vegetal como tempero para dar sabor à nossa alimentação, tratar infecções de ouvido e afastar os vampiros: o alho. Esse bulbo comestível de uma planta da família do lírio, nativa da Ásia Central, além de tornar os alimentos mais saborosos, tradicionalmente tem sido utilizado para fins de saúde por culturas como a dos egípcios, gregos, romanos, chineses e japoneses.

O responsável por essa relação entre alho e saúde é um composto chamado alicina. Alguns pequenos estudos sugeriram que a substância presente no alho pode ser útil para melhorar ligeiramente a pressão arterial, o colesterol, a função imunológica, a prevenção de certos tipos de câncer e o estresse oxidativo – um desequilíbrio que pode levar a doenças como câncer, Alzheimer e diabetes.

“Há muito folclore sobre os efeitos benéficos do alho para a saúde. No entanto, não temos dados de ensaios clínicos controlados”, disse por e-mail à CNN Alan Slusarenko, professor de fisiologia vegetal da Universidade RWTH Aachen, na Alemanha.

Transformar a alicina em um medicamento eficaz tem sido uma grande dificuldade para a ciência, segundo Eric Block, professor emérito de química da University at Albany e autor de “Garlic and Other Alliums: The Lore and the Science” (“Alho e Outros Alliums: A Tradição e a Ciência”, em tradução livre). “Muitas empresas que querem ganhar dinheiro estão fazendo afirmações falsas sobre a atividade desses compostos nas células”, afirma.

Slusarenko explica que a alicina é “destruída” quando cozida e que os suplementos geralmente não contêm ou contêm teores variáveis da substância. Além disso, os especialistas ressaltam que a Food and Drug Administration (agência reguladora de alimentos e medicamentos dos Estados Unidos) não regulamenta os suplementos alimentares.

O especialista explica que, quanto mais lento o metabolismo de um indivíduo, mais provável que ele tenha efeitos colaterais, como erupção na pele, azia, irritação do estômago e queimaduras no esôfago ou no trato digestivo. “Algumas pessoas que consumiram alho cru ou o esfregaram na pele acabaram na sala de emergência com queimaduras de segundo grau”, acrescenta.

Há benefícios, mas não é uma panaceia

Talvez o maior benefício do alho não seja o que a ciência tem a dizer sobre ele, mas sim como o alimento pode nos ajudar a comer melhor.

O alho tem cerca de 2% do valor diário recomendado de manganésio, fósforo e vitamina B6 e de 1% a 2% do valor diário recomendado de cálcio, vitamina C, potássio e selênio. Seu aroma e sabor podem intensificar o gosto de carnes, aves, frutos-do-mar, vegetais, massas, pizzas e muito mais. “Ele deve ser considerado parte de uma dieta saudável”, diz Block.

“É possível que, no futuro, os cientistas descubram maneiras de utilizar essas moléculas notáveis para tratar doenças. Mas, novamente, isso deve ser feito usando todo o poder da ciência para testar compostos de uma forma justa e honesta para ter certeza de que eles realmente funcionam”, conclui o especialista.

Alguns europeus medievais acreditavam que os vampiros foram criados por uma doença do sangue, então as pessoas carregavam alho pensando que era um antibiótico forte que poderia matar os monstros.

O distúrbio do sangue chamado porfiria pode ter corroborado essa crença, de acordo com o Carnegie Museum of Natural History. A porfiria é um grupo de doenças genéticas raras caracterizadas por uma enzima defeituosa de que nosso corpo precisa para produzir hemoglobina, substância responsável pelo transporte de oxigênio por todo o corpo.

As complicações da doença podem deixar a pele pálida e encolher as gengivas, fazendo com que os dentes pareçam maiores. O alho e a luz do sol podem piorar os sintomas, então as pessoas com porfiria devem evitá-los – um hábito que alguns atribuem ao vampirismo.
